A new school year has begun.

It seams like a while since I've posted anything. Sorry about that.

Things always seam to get real hectic when school starts. There's been lots of things going on but I won't bore you with the details. I know you all have been busy too. This year I have been noticing the little kindergarten students. They are so tinny! If I had to do it all over again I might try home schooling. I mean those kidos are so little! I couldn't let my babies go to school that small, much less ride the bus all by themselves. I guess I just had big kids! Ha ha!!! Oh to be in second grade again. Lets learn about money. Sounds more fun that paying bills hua? Ha ha! I did want to show you all this cute idea I made for my students. Again I found this in blog land and have it posted on Pinterest. You can also find the link here. My friend and I filled these bags with treats for their welcome back. We put in pencils, erasers, silly bands and other stuff like that. We were told not to give students candy this year. Well there goes my bribery tools. Ha ha! I hope you all are having a great start to a new school year. A Hurricane and Muffins

Well if any of you have been watching tv you know that there is a hurricane hitting the east coast at the present time.

After all the preparations have been made, now we wait.

We have done everything that needs to be done. We have food, water and ice. Got gas in the car and cash in my purse. My trash cans are in the

garage and my plants have been put inside as well.

I've washed all my laundry too.

So............what do I do now?

Bake muffins! Duh!

I thought I would share this with you.

This is really easy. That is why I tried it.

All you use is 3 cake mixes, 3 sticks of butter, 3 eggs and 3/4 can of sweetened condensed milk.

Sounds to easy to be true! Ha ha!

You need to be careful not to over bake it. Every time I stuck in a tooth pick it was still gooey. I think the top is a little dark.

I got several compliments from friends and my daughter really likes it.

So that makes me happy. :)

Ice Cream

There is a first time for everything! You remember the first time you drove a car. The first time you kissed a boy. Your first job interview. Well this is my first time for to make homemade ice cream. I know sounds crazy, but true it is. Now for sure I have eaten my share of home made ice cream. But I never prepared it from start to finish. Once again I fall back on The Pioneer Woman. What can I say. She's my idol! I followed her recipe except I used Half and Half instead of heavy cream. You can find a recipe to follow on the internet just about anywhere. I have an electric ice cream maker that belonged to my folks. Ok let's crank her up!

A little ice then a little salt. Repeat

More ice and more salt.

About 40 minutes later. Yes! We have ice cream!

Oh my goodness, I can hardly stand it! I text all my friends to tell them what I made. No kidding I really did! This is the bomb!

Back to School

Ok, I hate to post this...but here it goes.

I'm back to school this week.

Wednesday staff is back and the little kidos start back on the 23rd.

I've had a really wonderful summer!

It has been so relaxing and I don't say that often enough.

I went to visit my family in Missouri and also attended

my nephew's wedding.

While on the road we visited several great places including Pilot Mountain. I posted about it here.

Truly a beautiful place!

I've tried out several new recipes and all have been yummy!

I have enjoyed all the new blogs I've found several super blog friends that share such wonderful ideas of theirs and their kids! (You know who you are!)

I have done some painting around the house. Finally finished the upstairs and garage doors thanks to my family. I've also done loads of cleaning and organizing. Still lots to do in that area!

I visited my son and his wife in DC, gone picnicking and played at the beach.

Crochet has really been occupying my time theses past few weeks! I've made loads of wash cloths, flowers, and 3 winter scarves. There were lots of starting and stopping so I could learn a new stitch.

I am now in the middle of a beautiful afghan.

But now that all has to come to a screeching halt!

As of Wednesday my focus will be all about school

and the kidos.

I must say I am looking forward to it maybe just a little.

I always like to make little treats for children. It's my way

of bribery. Ha ha!

I have found so many super ideas in blog land that I can use at or for school.

Well....Maybe I can.

I've opened and account over at Pinterest. What a cool place.

You can save all sorts of photos you like that you've found on the web. Then when it's saved it has the link of where you found it. You save all your "pins" on these boards that you create. Real easy! I have ideas saved for home, school and food.

Spice Rubbed Chicken with Avocado Salsa

My daughter came home from work today and decided to cook dinner on her own.

Sounds like a winner to me!

So the both of us start looking for ingredients in the fridge, pantry and freezer.

It's going to be chicken because that's all we have.

She gets on the computer and starts to look for a recipe idea that is different.

And something that has ingredients that we all ready have.

No one in my house really likes to go on a grocery run at the last minute.

So she finds an idea she'll try.

It's from Martha Stewart.

The only things we don't have are cayenne pepper and red onion.

Hence the name change to Spice.

No problem.

So far it is looking good and the smell is awesome!

At this time I'm in the living room with my crochet.

Wow! I like this.

You know this means I will have to wash up.

The chicken is cooking in olive oil on a medium heat.

So here it is, Carmen's creation!

I am so proud of her!

doesn't this look amazing!

Recipe:

1 tsp coarse salt

1/2 tsp pepper

1/4 tsp cayenne pepper

(we used Chicken Rub by Szegeo and 1/2 tsp red pepper flakes)

3 boneless chicken breast

2 Tbs olive oil

1 medium red onion

(we used a yellow onion)

2 Tbs fresh lime juice

1 avocado cut into chunks

In a small bowl, combine salt, pepper and spices together and rub all over the chicken.

In another bowl combine onion and lime juice and set aside. Just before serving add avocado chunks into mixture.

Over med heat cook chicken in oil until browned on both sides, 8 to 10 min per side. Make sure the heat isn't to high.

Serve chicken topped with salsa.

You should try this.

When she showed me the recipe I didn't think it looked that good.

Boy was I wrong!

Crisp Pork Tenderloin Sandwich

Yummmmm!

Ok here's the story. I was born and raised in Missouri a farmers daughter. We lived in a rural area with only small towns

around us.

One of the sandwiches I learned to love was a tenderloin sandwich.

Nothing fancy. Menus in the small towns always had hamburger, hot dog, french fries and tenderloins.

A tenderloin is a thin, deep fried pork sandwich. You can get them any time of the year and even at the cook shack during the county fair.

Please let me know if you have heard of these.

I now live in North Carolina which is only second to Iowa in pig production.

Please tell me why no one here has heard of a tenderloin sandwich?

So here is my recipe:

Some of you my have other ways of making the beloved tenderloin sandwich. If ya do bear with me.

Purchase a pork loin that is un-seasoned and slice into an 1" to 1 1/2" thick pieces.

Pound out very thin with a kitchen mallet. Do this rather gently so you don't rip up the meat. It will be more than double in diameter.

Next I place the pork in an egg bath and then dredge in ground crackers.

This is a little messy. I also press the crackers into the meat with my fingers.

This is how it should look.

The only seasonings I use is salt and pepper.

Oh yes, I sprinkle adobe on everything I cook.

Can you see how thin it is?

Brown each tenderloin in a skillet of hot oil ( but not smoking).

After the first one cooks I turn the heat down a bit so the oil doesn't smoke.

I really don't like to eat lots of fried foods, so I make this only on special occasions.

Other than that I get my fix when I go to Missouri for a visit which is only once a year.

This is looking so good!

Making A Ripple Blanket

I'm so excited to share this with you all. I told you all earlier that I'm a little crochet obsessed right now.

I now find myself going to the store to replenish my yarn. I've even ordered from the web twice to get yarn.

First I found it very relaxing to sit a spell and relax and work my little hook. Now It is becoming more of a passion. I look for patterns all day. So much for cleaning the house. Hea, but that's what I have kids for, right?

Attic 24 has been a big inspiration for me. I love her use of such bright lovely colors.

I can't get enough.

Some of my daughters friends are starting to ask me to make a blanket for them.

Oh no, what am I into? Both my son and daughter give me there input as to what color to use next. Ha ha!

Let me get this little beauty finished first. I am moving right along I think. My blanket is a wide as my queen bed but doesn't hang over the edges. I all ready have other projects planned in my head. See ya all soon. Bye Bye. Peggy
