Chicken Pasta Chili
I found another really good recipe.
And no I didn't get it from PW. Ha ha!
My family really likes Tex-Mex, so when I ran across this from Picky Palate I couldn't wait to try it. You can find her recipe here.
I love cooking in my cast iron skillet. I use it quite a lot.
This is an easy recipe to put together. Great for a pot luck because it will serve several.
Several years my mother-in-law gave me a recipe and on the back of the card she had written,"Good to take to a funeral as it serves many."
Oh my gosh! How funny. I have never forgotten that.
Recipe:
8 ounces wagon pasta noodles
1 cup finely chopped white onion
1/2 cup finely chopped yellow bell peppers
1 tablespoon minced garlic
2 Tablespoons extra virgin olive oil
2 cups cooked shredded chicken breast
1o ounce can Rotel diced tomatoes, mild
1 1/2 cups reduced sodium chicken broth
1/2 cup corn, fresh or canned
1/2 cup white beans, drained and rinsed
1 Tablespoon chili powder
1 teaspoon ground cumin
1 Tablespoon dry Ranch seasoning from packet
1 tablespoon finely chopped fresh cilantro
Cook pasta and drain. Saute onions and peppers about 5 minutes. Add garlic and cook stirring for 1 minute. Add chicken, tomatoes, broth, corn, beans, pasta, chili powder, cumin, Ranch seasoning and cilantro. Stir until well combined. Reduce heat to low and simmer until ready to serve.

Hi Peggy! This recipe looks good and it's the time of year that I like to try new chili recipes. This is unique with the pasta added.
Also, thanks for joining me at The Shady Porch...I'm your newest follower now too! I look forward to swappin' recipes! :)
Seriously! I would eat that up!!! I will most definitely make that. I am going to leave a note on my fridge to remind me. I hate when I see something that I definitely want to do and then think that my memory will pull me back to where I saw it! and then I forget!!
