Funnel Cakes

Well, what goes with fire works? Funnel cakes I say! 
My daughter and I were thinking that it would be nice to have a funnel cake stand near by.  So we rushed home from watching the fire works and whipped up some up. 
I've never made them before, but they are way easy!  Like about five minutes and were were stuffing our faces sharing this sweet treat..  Ha ha




Recipe:
1 Table spoon sugar
1 tsp baking soda
1 tsp salt
2 cups flour
1tsp vanilla
1 egg
2 cups milk
1/2 cup melted butter

Mix dry ingredients in a med sized bowl.  Then mix milk, egg, and vanilla in another bowl.  Add the wet ingredients into the dry with a mixer. Add melted butter last. Put your mixture into a container with a tip you can put your finger over.  I used a plastic bag with a small tip cut off.  Drizzle in a hot skillet with oil.  This should be very hot but not smoking. 


We had fun making theses. My daughter thought they were the real deal! We did get a little carried away with the powered sugar!

 Jennifer's Avocado Potato Salad





 I hope ya' all are having a good summer so far. This has been my first week of my summer vacation.  Oh my goodness, I hate getting such a late start on my summer! 
So much to do, so little time!


I was visiting my friend Jennifer a few days ago and she served this yummy salad.  I was very surprised. I shouldn't have been since everything she makes is out of this world!
I have been a little slow to get on the avocado train. Ha ha!
Don't get me wrong, I love guacamole!  But not so sure I would eat it in my potato salad. 

Recipe:
2lb red potatoes cut into cubes
1 cup mayonnaise
5 tsp cider vinegar
2tsp Dijon mustard
1tsp groung pepper
1tsp salt
4-5 green onions
3 ripe avocados cut in small pieces 

Boil potatoes untill fork tender, drain and place in bowl  Combine mayo, vinegar, mustard, salt and pepper.  Pour dressing and onions over potatoes and gentily mix. Stir in avocados.
Refrigerate before serving.

Walking Tacos

I found this crazy idea awhile back in blog land.  How fun does this look!  My kids thought this would be fun to try out.  
This was so easy and fun.  Oh, the clean up was easy too.



No directions are necessary.  Just fix your tacos like you normally would, only put it all in little chip bags.

  
 Yummy!

 Teacher and Staff Appreciation
 

The parents at our school honored the staff Friday with a smorgasbord of sweets.
We were all in shock at the tremendous amount of food we received!
There were cookies, cakes, pies and desserts of all types.  I don't know if they love us, or our trying to kill us by sugar overload!  Ha ha! 
And I was a good girl and didn't touch a thing.  
Ok, I did have a brownie or two.

 Oh my goodness!  
This wasn't even half of it.

 This is making my teeth hurt to just look at all this!
Needless to say there was a ton  stuff of left over!

 Yes, we were all very appreciative of all the love in the form of sweets.

Mothers Day Flowers
Today was a fun day with the little ones. 
Our science lab had been turned into a plant nursery.  
This week several teachers wanted to have the kiddos plant some flowers in honor of Mothers day.  
This was a great treat for the 2nd graders.

Me and The Weather Guy
The second graders at our school have been studying weather for the past couple of weeks.  And around here that is the major topic of conversation.  I don't know about you all, but here spring didn't happen.  Yes!  We just skipped it.  We are smack in the middle of summer with 90 degree temps!
So Thursday we were visited by our own meteorologist from WCTI.  How exciting! 
Isn't he cute? I just had to blog this.  Too funny!

 The Spring Vineyard
and blogger update. 

A couple of weeks ago, I was visiting my friend Elizabeth.  Her property sits next to this beautiful little vineyard.  This is what you see when you pull into her driveway!  How cool is that!  Can you imagine seeing all of this everyday.  I couldn't resist getting out and snapping  a few photos.  It was so peaceful and relaxing.
Hum?  I wonder if I could sneak away with a hand full of grapes this summer and not get caught.  Ha ha!  

 

 
 So, back to this new blogger format...
I haven't posted in a few days so I'm feeling a little lost.  When did this happen anyway.  I'm not sure if I like it or not.  It's just I have to learn something new all over again.
What do you all think?  If you have any tips or suggestions please pass them on. 
I'm having a little trouble with the font size.  It looks either to small or to big.  I don't want it to be difficult to read.  Every once in a while I run across a blog that has tiny print. Ugh!


 I also have another new thing to share. 
I am now officially on Facebook.
I know, It's about time. Ha ha!
After I figure it all out, I will post a link so that we can be "friends" with each other.

Coconut Cupcakes
My daughter and I made this terrific cupcake over the weekend.
We found the recipe at Your Cup of Cake
Lizzy has some of the best cupcake ideas ever!
Everything about this cupcake is sooooo good!
You will have to pop on over to her blog to get the recipe.
You won't be disappointed!
The cake part has a mild coconut flavoring and also the cream cheese frosting.
But the chocolate frosting puts it over the top!
I could make myself sick eating theses little babies!
