Chicken Cordon Bleu Casserole
This is a yummy recipe I found on line, but made several changes. You know me I can't leave anything alone. Mostly because I run out of an ingredient from time to time.
We had a staff development meeting last year that was catered. This was one of the entrees that was served. I think it's a real tasty meal and also easy to put together.
All you need is a salad and your set.
Recipe:

1 box Stove Top Stuffing
1 can cream of chicken soup
1 cup milk
2 chicken breast
1 cup ham sliced (can use country ham or ham slices)
salt and pepper to taste
adobo to taste (may use garlic salt)
1 cup Swiss cheese
1 cup Gouda cheese or Cheddar shredded
Prepare stuffing mix as directed and set aside. In a med. bowl, combine soup and milk; set aside. Saute chicken in olive oil and season with salt, pepper and Adobo.
Cut up chicken in small bit size pieces along with ham and place in the bottom of a casserole dish. Layer the Swiss cheese and half of the Gouda. Pour soup mixture over the cheese. Then layer in the stuffing and top with remaining cheese.
Cover and bake for 35 min in a 350 degree oven. Then uncover and bake an additional 10 min.
