Chicken Cordon Bleu Casserole
This is a yummy recipe I found on line, but made several changes. You know me I can't leave anything alone. Mostly because I run out of an ingredient from time to time.
We had a staff development meeting last year that was catered. This was one of the entrees that was served. I think it's a real tasty meal and also easy to put together.
All you need is a salad and your set.
Recipe:
1 box Stove Top Stuffing
1 can cream of chicken soup
1 cup milk
2 chicken breast
1 cup ham sliced (can use country ham or ham slices) salt and pepper to taste adobo to taste (may use garlic salt)
1 cup Swiss cheese
1 cup Gouda cheese or Cheddar shredded
Prepare stuffing mix as directed and set aside. In a med. bowl, combine soup and milk; set aside. Saute chicken in olive oil and season with salt, pepper and Adobo.
Cut up chicken in small bit size pieces along with ham and place in the bottom of a casserole dish. Layer the Swiss cheese and half of the Gouda. Pour soup mixture over the cheese. Then layer in the stuffing and top with remaining cheese. Cover and bake for 35 min in a 350 degree oven. Then uncover and bake an additional 10 min.

Cinnamon Baked Donut Puffs
I found an old recipe that someone gave me years ago. I was in the mood for something sweet and looking for a recipe that was easy.
East and fast being my middle name.
I think all together it took maybe 30 min from start to finish. This recipe makes 24 "puffs".
Yum!!
Ingredients:
1 1/2 cup flour
1 1/2 teaspoon baking powder
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/3 cup butter
1/2 cup sugar
1 large egg
1/2 milk (I used almond milk)
sugar coating:
1/2 cup melter butter
1/2 cup sugar
1 heaping teaspoon cinnamon
Combine flour, baking powder, cinnamon, nutmeg, and salt in a medium mixing bowl. Set aside. In another medium mixing bowl cream sugar and butter them add egg and beat until smooth. Slowly add flower and milk, alternately, until all ingredients are mixed but not over mixed. Using a medium size scoop fill a mini muffin tin 3/4 full. Bake at 350 degrees for 15 min. Be careful not to bake to long. Remove from oven. While still warm dip into melted butter and then roll into sugar-cinnamon mixture. Enjoy!

Random Acts of Kindness
Yesterday when I got home from work, I found my daughter cleaning my refrigerator. Yes, she was cleaning my refrigerator for top to bottom.
She said it was an early Valentine present.
Oh how sweet!
No one in my whole life has ever cleaned my refrigerator before!
I still can't get over it. I had to take a few photos and show it off. I can't believe it still looks so full after so much was thrown in the trash.
Just look at how clean the side shelves are!
I know I have a ton of condiments.
Look at this. The handles are shining!
She even cleaned the outside!
Don't I have a great daughter!

Super Bowl Food for the Girls
My daughter and I are cooking up a bunch of Super Bowl snacks!
We are here by our selves and decided that just because we don't watch football, doesn't mean we can't have some football grub.
This is what we came up with:
Wings
Meatball Sliders
Taco bean dip
Cheesy dip called "Crack"
&
Pepperoni & Sausage Pizza Puffs
Most of theses recipes came from a blog called Plain Chicken.
Steph has some really yummy recipes on her blog. And her photos are way better that mine.
This is the marinade that my daughter put the wings in. She said that this turned out really good. Sorry to say that I don't like wings.
Had to throw this one in. My daughter made a pizza from scratch a couple of day ago. It turned out wonderfully. Three cheeses plus Feta. Yum!
This is the pepperoni and sausage pizza puffs. Sorry, we ate them and forgot to take a picture. Ha ha! Too funny! We were really hungry.
Looks like my co-workers are going to have some great snacks tomorrow.
